Lamington Bliss Balls by Shayna

Lamingtons in bliss ball form!? Yes please! These delightful bliss balls are easy to make and provide a great unique treat for visitors or just for yourself!
Refined sugar free, GF, DF, nut free, and vegan
Makes 12-14 bliss balls
Ingredients:

1/2 cup hemp seeds (hearts)

1 cup shredded coconut

1 cup coconut flour

1/4 cup maple syrup

1/4 cup + 2 Tablespoons water

2 teaspoons vanilla essence

1/4 cup coconut oil

2 Tablespoons of raspberry powder or cocoa powder

1/2 Cup shredded coconut for rolling the balls in
Method
In a high speed blender, add in the hemp seeds, shredded coconut, coconut flour, maple syrup, water, and vanilla essence. Blitz for around 5 minutes until everything is combined and smooth. Mixture should be slightly crumbly but easy to compress. Roll into tablespoon size balls, and refrigerate for a few minutes.
In the meantime, melt the coconut oil in a bowl, and then add in the raspberry powder or cocoa powder (or your choice of whatever freeze dried fruit powders you have available!). Mix until combined. Put the 1/2 cup shredded coconut in another bowl. Remove the bliss balls from the fridge and roll them first in the oil/powder mixture until covered, and then in the shredded coconut. Repeat with all the bliss balls. Enjoy!
